Catering

The catering portion is perhaps the most important aspect of the website for the food truck. It’s also a little more complicated. Just like our day to day operations, we want to gear it around what we have the most inventory of (pulled pork, pork burgers, and sausages). Of course we’ll offer any cut we do and cater it to their desire but they’ll have to pay more for that. So the two layouts are

1) A La Carte menu offering our daily menu with a fixed cost of $350 added to the final receipts.

2) Custom menu starting at $10/person. The menu can be customized to your individual taste and budget. For more information or if you have questions, please contact us.

Sample Catering Menu

Appetizers/Crudités

1. Grilled Marinated Garden Platter (seasonal selection, ask chef)
Vegetable w/lemon garlic aioli
2. Grilled Sausage Medley (your choice)
Assorted artisan cheeses, mustards and breads
3. Fresh Fruit Medley (seasonal selection)
Fresh organic yogurt creme dipping sauce or berry reduction balsamic

Pasta / Anti Pasta
1. Traditional Italian Sausage
Penne or farfalle with organic virgin olive oil, garlic, fresh basil blend, fresh fennel, roma tomato, black olives, red onion, shredded mozzarella parmesano, Italian parsley
2. Modern Mac n’ Cheese
Medium shells, cheddar Polish sausage, garlic, sweet onion, sweet peppers, aged white cheddar bechemal sauce, fresh parsley
3. Almost As Good As Mom’s Creamy Potato Salad
Red skin-on potatoes, smoked bacon, sweet peppers, sweet onion, celery, chive, organic eggs, dijon mayo

1. Grilled Smoked Pork Loin Kabobs
with: Pinapple, Red Onion, Portabella Mushroom, mixed Sweet Peppers over organic rice blend with jalapeno maple syrup glaze & fresh cilantro
2. Smoked Bacon, Ham & Swiss with: Organic mixed greens, including spinach and arugula on a bakery fresh pretzel bun, chipotle mayo and organic tortilla flaxseed chips
3. Chefs Olé Molé Burrito/Soft Shell Tacos
Grilled mixed sausages
with: adobo pepper, molé sauce, sweet onions, sweet pepper, black bean, tomato, green chiles, with fresh lime cilantro (grilled jalapeno poblano or banana pepper) creme fraiche
