The Tollefson Family

In 1985 we experimented with a unique idea at the time — not using a feed-based antibiotic. We used an "extruded" or whole soy bean feed, which is high in Omega3 Fatty Acids. By using this new diet, there was enough protein and oils in the all vegetarian diet that there was no need to use animal-sourced protein.

Initially, we sold our products at local markets such as Cub, Driscoll's, Lund's, and Sam's Club where we did our own demos. When our USDA label was the first to carry the claim: "Hogs Raised Without The Use Of Subtherapeutic Antibiotics or Sulfa Drugs", we attracted the attention of national chains such as Whole Foods (formerly Freshfield's) where we were one of their debut meat products.

As any small business owner can attest, expansion can be a mixed blessing and pull you away from the focus of your work. A few years back we dropped all wholesale accounts to concentrate on the direct-to-consumer sales. This step enabled us to have total quality control of the product our customers eat.

During this entire time, the Minneapolis Farmer's Market has always been our anchor. As a vendor for almost 20 years, we've built a close relationship with our strong customer base.

As a first step to expand on our business model and to make a place for the next generation, we are selling at the Nicollet Mall on Thursdays. So if you can't get to the market on the week-ends or want to save a trip, come see us there — we have insulated bags available, to keep your items cool until you get home.
